Angela's Egg Rolls

















most things  are  approximations, we don't   measure  in  these  parts!


~Angela's Yummy Egg Rolls~             
  3 bundles bean thread noodles
  1 lb ground pork
  2- 2 1/2 c shredded cabbage
  1/2 cup shredded carrots
  2-3 bunch green onions
  1 bunch cilantro chopped
  1/2- 1  tsp  salt,  pepper,  garlic  powder
  1/2 cup soy sauce
  1/2 cup oyster sauce
  2 or 2 eggs
  1-2 pkgs  spring roll  pastry  wraps
  Soak noodles in hot water  until soft
  Cut into 4" pieces
  In a large bowl add all ingredients mix well. Scoop  1/4-1/3  cup mixture onto  pastry (corner  to  corner). fold-in two corners & roll. Seal with  egg  yolk.  Fry until golden brown.

Can't Wait For February!



 Sooo excited that Angela is beginning to show a bigger tummy.  
She had said early in her pregnancy that she was already too big for her regular clothes.  
    So she started wearing cute Lycra stretch pants.  No official maternity clothes except her mother had just bought/sent her a black maternity dress which she loved and looked really cute in.

 


  Imagine our joy in getting ready for another 
Grandbaby Boy!
Boys are great!
So excited for Wy & Angela to get a little wrestler 
like his daddy!
We can't hardly wait for February!
Anxious to buy a car seat.
  It was a good excuse to FINALLY get one for MY car. 
  My issue was: Never knowing just the 
"right one" 
to get.
 
  I started collecting 
“Boy Stuff” 
. . . since it’s hard to find 
in the sea of 
Cute GIRL STUFF . . .
which did not hurt my feelings cuz I love Boy Stuff!

Another Day To Party

Birthday 
is on  
September 9th.
We went to Green Canyon Hot Springs to celebrate their Birthday’s that night. Swimming, Picnic, & Birthday Cakes!

On the 10th Brett & I went to Rexburg and invited 
Angela & Wy for Angela's POST-Birthday Celebration
Ice Cream Cones @ Coldstone!

 While we were there I got a cell phone call from Craig’s girlfriend Sylvia who said they were
GETTING MARRIED!
HooRay!
Probably in November.

The Cocoa Bean Cupcake Shoppe and got 
CUPCAKES & drinks

(YES MORE TREATS! WHY NOT)

tO Celebrate the Good News with Leslie & Angela; 
letting Sylvia break the news to the girls. 
We’ve so been looking forward to this day!

We love Sylvia, always have, and are thrilled to have her HAPPY and want to be "one of us".
 
Here's the Rest of The Story:
While deciding where and when~ 
They decided Mesa Falls in November could be bad, weather-wise.
Taking that into consideration and the logistics of getting there if bad or snowy weather; She thought about moving it up a month
randomly picking a weekend . . .
"How about October 16th?"



I thought . . .  
General Conference is always the first weekend in October . . .
Paula & Jesse Nelson's Wedding in Boise the next weekend . . .
and then theirs on the 16th!
Perfect!

Ended up SadieRuth had an important High School District Soccer Game 
that day that she couldn't miss 
(due to injuries on the team and they needed their Sweeper! )

Jesse would still be serving as a Missionary 
in Lithuania until the end of November and would celebrate 
via: pictures and emails.

Travis too would have to miss our Family Wedding 
as he was stationed in Fort Benning, Georgia~ Army Officer Training.


For whatever reasons I can list
I believe it was Heavenly Father's Tender Mercies 
that we had a beautiful happy Wedding Day on October 16th.
Angela's accident happened three days later

Summer 2010
began with a daughter in Drivers Ed.
needing to put miles on behind the wheel. I sat in the passenger seat
and enjoyed being chauffeured. 
  
   One of our first drives was to the
Driggs Cemetery to visit a friend.
From there we drove to the Victor Cemetery where Granny’s family is buried. 
Funny how it sparked the desire to finally choose plots for our family there too.
   A new extension of the Cemetery opened up new space for sale.  



  One day Kyle & Angela drove to the Cemetery with me so I could show them the three different spots I wanted to decide between.  However I already knew which ones my heart was set on.







On August 30th we bought four plots by the creek. 
Perfect timing . . . I believe another one of Heavenly Father’s Tender Mercies. . . and there were many. 









THIS IS THE PLACE!
It's a little cove next to the creek that runs all summer.  I love it and Angela loved it too.

Guess What?


It’s A BOY!
Angela & I were at Porter’s Craft store in Rexburg one day in September or October;
(i wish i could remember)  I asked Angela how her Dr. Appointment went that day.  
They were supposed to find out if they were getting a boy or girl. 
 The Dr. was gone delivering a baby that day so the nurse tried to get a look with the ultrasound but couldn’t tell for sure.
So, I called Gramma Huntington there in the store on my cell and asked her
what she thought they were going to have (G-ma Huntington is my mom who is always right in these matters) 
She said, “It’s A Boy!”
Two weeks later after their Next 
Dr. Appointment 
Angela & Kyle called me and said,
"G-ma was right and 
yes, they are having a BOY”  

o due to have been born February 18, 2011

Angela loved attending the Temple often & studying her Scriptures.
She & Kyle taught the Old testament Class
  to teenagers, who they love with all her heart.
She had a strong testimony of the gospel of Jesus Christ.

Angela breaks the news to Kyle that they are FINALLY expecting a baby!


After a year of trying to get pregnant and seeing a specialist They’re EXPECTING A BABY! 
So HappY for their long awaited miracle!


On a personal note:
I am bad this way: I tried not get too excited because I don’t want to jinx the good news.  I was hoping nothing would go wrong. . . so I wait to get too excited in my heart.  When they'd come over I'd ask how she was feeling and she'd say she had a tight pain and would hold her right side of her tummy.  I got excited and said it was probably a Braxton-Hicks Contraction which is a good sign that her body was preparing for a baby delivery.
So the next time she mentioned it, it worried me and I asked her if it was a pain or a cramp?  She wasn't sure.  I asked if she had talked to her doctor and she said they had.  That made me feel better.
